Chinese Chicken Salad with Asian Peanut Dressing

I had left over rotisserie chicken in my fridge today that was calling to be used. I googled what to do with left over rotisserie chicken for the win and wound this great recipe. Derek and I loved it. The kids complained that it was a little spicy (so if you can’t take the heat decrease or leave out the Sriracha.

Ingredients Dressing:

  • 2 1/2 Tbsp peanut butter
  • 2 tsp toasted sesame oil
  • 1 Tbsp canola oil (or peanut oil)
  • 2 tsp soy sauce
  • 2 tsp Sriracha (optional)
  • 1 Tbsp honey
  • 1 Tbsp + 2 tp rice wine vinegar
  • 1 1/2 Tbsp water
  • 1 glove garlic, minced
  • 1/2 tsp ginger

Ingredients Salad:

  • 1 1/2 C Chinese or Napa Cabbage, shredded
  • 1 C red cabbage, shredded
  • 1 1/2 C carrots, julienned
  • 1 1/2 C copped shredded chicken (chopped rotisserie chicken)
  • 1 1/2 C bean sprouts
  • 1 green onion
  • 1/4 c peanuts, roughly chopped
  • 1/4 C crunchy fried noodles (optional)
