Crock Pot Keto Beef Brisket Stroganoff

One day I had some half of a slab of beef brisket that needed to be used, but also not a lot of time around the dinner hour to cook. I came across this recipe and decided to give it a try for my family and husband who was trying to eat keto at the moment. All of us ate it on top of egg noodles, but he ate his on top of a cauliflower mash.

KETO STROGANOFF

Ingredients:

  • 1 kg beef brisket
  • 5 garlic cloves, cut in half
  • 1 Tbsp sweet paprika
  • 2 tsp pink Himalayan salt
  • 1 tsp white pepper
  • 2 C beef broth
  • 2 Tbsp tomato paste
  • 2 Tbsp soy sauce
  • 1 C sliced mushrooms
  • 1/2 sour cream
  • cracked black pepper

Directions:

  1. Add brisket, garlic, paprika, salt, white pepper, and stock to slow cooker.
  2. Cook 6 hours on low.
  3. Add tomato paste, soy sauce, and mushrooms to slow cooker,
  4. Cook 1 1/2 hours on low.
  5. Add sour cream and season with pepper.
  6. Cook final 1/2 hour until thick and brisket shreds.
  7. Eat with cauliflower mash or on its own (or over egg noodles if you aren’t into keto).
