I had my first go at making cooler corn, and I think it was a success. We planted a whole bunch of corn on the cob and then by the time it was perfect and ready for picking Derek was trying to eat keto and not wanting to eat any corn. I needed to find a way to use our corn abundance (I think I picked about 40 beautiful ears of corn) that didn’t involve Derek. The perfect opportunity presented itself. A group of Derek’s high school buddies all decided to get together with their families the Saturday before school started and throw a bit of a back to school BBQ. Tons of people and a great way to get rid of tons of corn, but how to cook all that corn…enter in cooler corn so easy!
- Corn on the cob for a crowd
- Boiling water
- salt and pepper
- Sticks of butter
*For about 40 ears of corn. I cleaned and washed the corn and then piled them all in the cooler. I added 2 sticks of butter and a bunch of salt and pepper to the cooler. Then, I pour two big pots of water on top. Closed the lid and them them steam in there for 45 mins- 1 hour. Super easy and butter and salt already on so you don’t have to worry about packing that along.
