Craig Pierce Tin Foil Dinner

My husband returned home from a scout camp out once and announced that Craig Pierce made the best tin foil dinners he had ever had and that I had to find out his secret.  His wife was happy to share, and I must say these are delicious when camping.  I love that he uses Keilbasa sausage so you don’t have to worry about meat cooking all the way through and then the two other things that make the dish are the green chilies and cream of mushroom soup.



  • Keilbasa sausage
  • Red potatoes
  • Carrots
  • Onions
  • Garlic
  • Green chilies, canned
  • Mushrooms
  • Peppers
  • Cream of mushroom soup

*You can fill these with whatever veggies you like honestly.  I usually slice potatoes and carrots real thin and sometimes even microwave them a bit before throwing them in, so I don’t have to wait for them to cook so long over the fire.  Make sure to double wrap this with thick tin foil, throw all the ingredients in and spoon cream of mushroom soup over top (don’t skimp on the cream of mushroom soup or the keilbasa).  Throw over some hot coals when you get to your campsite until everything is heated through, about 45 minutes.
