April Eddy was one of my best Young Women’s leaders growing up. We thought she was so cool. So cool that often on a Friday night instead of doing any of the typical high school teenage cool things, we would head over to April’s house and sit on her couch and talk with her. Her husband was a teacher at our high school and one of the football coaches. We would always get in trouble for calling him Brent at school instead of Mr. Eddy. Aside from being one of the best Young Woman’s leaders, April also had the best apple dip recipe. I was invited to a Pot luck baby shower the other day and knew this was the perfect thing to bring. It’s just different from the typical yogurt or whipped cream fruit dip and oh so delicious. Plus super simple! Everyone loved this dip and insisted I share the recipe. So here it is!
APRIL’S APPLE DIP
- 3/4 C brown sugar
- 8 oz cream cheese, softened
- 1/2 Tbsp vanilla
- toffee bits to taste, maybe 1/4 C (?)
*Whip all ingredients together. Serve with sliced apples (I usually slice them and then throw them in a bowl of water with a little bit of lemon juice before serving to keep from browning).
