I got this recipe from Tasha, one of my MAs at work. She brought them in claiming them to be gluten free and pretty healthy. I hesitantly tried one and couldn’t believe how good they were. I mean they aren’t the typical cookie texture, they are pretty soft. But if you go into these cookies knowing there is no flour or added sugar (other than the sugar already in the chocolate chips), then they are surprisingly delicious. Plus, there are only four ingredients and they are super easy to make. I had 3 super brown bananas sitting on my counter tonight that were begging to be used, and these cookies are way easier to and quicker to make than bananas bread, so I whipped up a batch. This recipe only make about a dozen cookies, I one and a halfed it tonight.
- 2 ripe bananas
- 1 C quick coking oats (I have never tried with regular old fashioned oats, but I am curious how they would do)
- 1/2 dark chocolate chips (or semi-sweet whatever your preference)
- 1 heaping Tbsp almond butter (or peanut butter would work too)
*Mix all ingredients together, plop on cookie sheets and bake at 350 degrees for 15 minutes.
