Was trying to come up with an accompaniment to my neighbor Jay’s smoked meat he volunteered to bring us from dinner (so good), and I had a bunch of red potatoes that needed using so I sort of followed a recipe on Allrecipes.com/ made a few variations of my own. They turned out good. Derek and I really liked them. But, if you don’t care for garlic, these are not for you.
GARLIC SMASHED RED POTATOES
- 8 red potatoes, cubed leave skins on
- 2 tsp crushed garlic
- 1/2 C butter
- 1/4 C half and half cream
- 1/4 tsp steak seasoning
- 1/4 tsp garlic powder
- A pinch of sugar
- Salt to taste
- Place red potatoes in pot, and fill with enough water to cover. Add 1 tsp of the crushed garlic to the water for flavor. Bring to boil, and cook for about 10 minutes, or until easily pierced with a fork.
- Drain the potatoes, and add the butter. Mash until the butter is melted. Mix in the half-and-half, steak seasoning, garlic powder, and remaining garlic. Mix potatoes with an electric mixer until smooth.
