I love a good balsamic vinaigrette. I often top my salads with just balsamic vinegar and olive oil. This one has the added bonus of thinly sliced shallots. You could put this on any salad, but tonight it sounded like the perfect paring for a goat cheese, beet salad I threw together.
BALSAMIC SHALLOT VINAIGRETTE
- 1/4 C balsamic vinegar
- 3 Tbsp shallots, thinly sliced
- 1 Tbsp honey
- 1/3 C EVOO
- salt and freshly ground pepper
