Just Like Cafe Rio

I got this recipe from my old college roommate Debbie Christensen.  Her family made it for the large crowd that gathered after a baby blessing one year.  And who doesn’t love cafe rio or a good restaurant imitation.  This recipe feeds a huge crowd.  You could easily cut it in half and still feed a small crowd.  I usually have the costco raw tortillas on hand and cook those up along side all this stuff and serve with black beans, grated cheese, salsa, sour cream,  and guacamole.


Ingredients for Rice:

  • 4 tsp chicken boullion
  • 4 tsp garlic minced
  • one bunch of cilantro
  • 1 tsp cumin
  • 1 can green chilies
  • 1 tsp salt
  • 1 Tbsp butter
  • 1 onion chopped
  • 3 C water
  • 3 C minute rice

*Blend all ingredients together in blender then, add water and bring to a boil, then add in rice and simmer for 30 minutes (I usually just throw all this stuff in my rice cooker and use real rice and let it cook).

Ingredients for Tomatillo Ranch:

  • 1 package dry ranch (or 3 Tbsp dry ranch powder)
  • 1 C mayo
  • 1 C chopped cilantro
  • 3 tomatillos (peel off paper)
  • 1/3 C buttermilk
  • 1/4 tsp cayenne pepper

*Blend all ingredients in blender and blend until smooth.

Ingredients for Pork:

  • 5-6 lb pork roast
  • 1 Tbsp cumin
  • 1 C brown sugar
  • 12 oz bottle LaVictoria Taco Sauce
  • 20 oz bottle of Coke


  1. Cook roast on high in crock pot with water half way up roast for 6 hours.
  2. Drain water and add remaining ingredients.  Cook 2 more hours.
  3. Then, shred the meat and mix together with juices and cook 1 more hour.
