Ginger Molasses Cookies

One year around the holidays back in the law school/ PA school days a bunch of the “law wives” as I referred to ourselves got together to bakes cookies.  Amy Gillis bought her family’s ginger molasses cookie recipe.  I had never made ginger molasses cookies, but they were good and fun and just different.  I’ve always been surprised when I bring these around how much kids enjoy them.  I made Derek buy me some molasses when we were in Barbados earlier this year and I’ve been saving the really good molasses for when I never made these cookies (but they are good with just any ol’ molasses too).

GINGER MOLASSES COOKIES

Ingredients:

  • 3/4 C oil
  • 1 C sugar (plus more for rolling)
  • 1 egg
  • 4 Tbsp molasses
  • 2 C flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp cinnamon
  • 1/2 tsp ginger

Directions:

  1. Preheat oven to 350 degrees.
  2. Blend together oil, sugar, egg, and molasses.
  3. Add in dry ingredients.
  4. Roll into balls, then roll in a bowl of sugar to coat dough ball.
  5. Bake at 350 for 10-12 minutes.
