Grilled Glazed Baby Back Ribs


I must be slightly weird because I don’t love fall off the bone ribs.  I actually prefer a little chew to my ribs.  Anyways, I love this recipe because it makes ribs just the way I like them, and I can cook them start to finish in 45 minutes!  I saw this recipe in a Cooks Illustrated magazine and was drawn to the idea of a short cooking time where generally ribs take hours to prepare and the slight chewy texture they described.  They provided 3 different glaze recipes or you could even brush on your favorite BBQ sauce.  To be honest, I’ve tried the Hoisin-Coconut glaze and loved it so much that I’ve yet to try the others.

GRILLED GLAZED BABY BACK RIBS

Ingredients:

  • 2 Tbsp salt
  • Two 2-lb racks baby back or loin back ribs, each rack cut in half

Directions:

  1. Dissolve salt in 2 1/2 quarts water in Dutch oven; place ribs in pot so they are fully submerged.  Bring to simmer over high heat.  Reduce heat to low, cover and cook at bare simmer for 15-25 minutes.
  2. Meanwhile, turn all burners to high, cover, and heat grill until hot, about 15 minutes.
  3. Turn burners down to medium-high.  Then, cook ribs bone side down for 20 minutes on the grill.  Brush with glaze at 10 and 20 minutes.

HOISIN-COCONUT GLAZE

  • 2/3 C hoisin sauce
  • 1/3 C canned coconut milk
  • 3 Tbsp rice vinegar
  • 3/4 tsp pepper

LIME GLAZE

  • 2/3 C lime juice (6 limes)
  • 1/3 C ketchup
  • 1/4 C packed brown sugar
  • 1 tsp salt

SPICY MARMALADE GLAZE

  • 2/3 C orange marmalade
  • 1/3 C cider vinegar
  • 2 Tbsp hot sauce
  • 3/4 tsp salt
