Dad’s Cookies

  Diane loves to tell a story about how one morning she had the tube turned to Good Morning Utah or something like that and they were interviewing someone with an award winning cookie recipe.  She called them Dad’s cookies because they were her Dad’s favorite.  They shared the recipe and she jotted it down.  They are an oatmeal, coconut, chocolate chip type cookie.  This is probably Derek’s favorite cookie recipe, so I guess the title Dad’s cookies rings true for us too.



  • 1/2 C butter
  • 1/2 C shortening
  • 1 C sugar
  • 1 C brown sugar
  • 2 eggs
  • 1 tsp vanilla
  • 2 C flour
  • 1 Tbsp baking powder
  • 1/2 tsp soda
  • 1 tsp salt
  • 2 C oatmeal
  • 3/4 C flaked coconut
  • chopped chocolate chunks (this was left over chocolate Easter Bunny tonight, but usually I just omit this and add more chocolate chips)
  • chocolate chips
  • nuts (optional-tonight we threw in some walnuts)


  1. Beat butter, shortening, sugar, and brown sugar in mixing bowl for 2 minutes.
  2. Mix in eggs and vanilla.
  3. Mix flour, baking powder, soda, and salt together and mix into other ingredients.
  4. Stir in oatmeal and coconut.
  5. Add chocolate chunks, chocolate chips, and nuts to taste.
  6. Bake 375 for 12-15 minutes.
