Whole Wheat Oatmeal Pancakes

  I have to give credit to Kristine Fuller for this recipe.  Back in the day when we all used to blog and actually read each others blogs she blogged that they were trying to eat more whole wheat in their family and then proceeded to post her favorite whole wheat recipes.  I am always trying to sub in whole wheat wherever I can because I feel like it just has more nutritional value and substance than plain white flour.  Pancakes in our house are generally made from whole wheat.   I love these pancakes.  The oatmeal gives them a sort of chewy texture.  My kids eat these just fine.  I suppose they would eat anything you put syrup on.  But beware, they are hearty and taste whole grain, so if you can’t stomach that you might not like them.

WHOLE WHEAT OATMEAL PANCAKES

Ingredients:

  • 1 C oats (her recipe called for quick cooking out, but I use just old fashioned rolled oats)
  • 1 C whole wheat flour
  • 1/4 C sugar
  • 2 tsp baking powder
  • 1 tsp salt
  • 2 eggs, lightly beaten
  • 1 1/2 C milk
  • 1/4 C veggie oil
  • 1 tsp lemon juice

Directions:

  1. Combine oats, sugar, baking powder and salt.
  2. Make a well in the center.
  3. Combine eggs, milk, oil, and lemon juice.
  4. Pour into well and stir until just moistened.
  5. Cook like regular pancakes.
