Strawberry Poppy Seed Dressing

 One of the greatest friends I obtained when Derek and I first moved back to Utah after our grad school hiatus in Oregon, is Bonnie Bennion.  I love this girl so much!  One night, I invited her to join Derek and I for dinner and she offered to bring a salad.  She asked me if I liked fruity salads or veggie salads.  I told her, I was not sure I had ever had a “fruity salad”, but that I would love to try it.  She came over with this spinach salad topped with blueberries, raspberries, mandarin oranges and I don’t remember what else, but it was tossed with the most delicious strawberry poppy seed salad dressing.  I am now a lover of fruity salads and make all kinds of fruity variations, but Bonnie’s strawberry poppy seed dressing is my favorite go to dressing for sweet fruity salads.  Tonight the salad was a mixture of kale, spinach and other greens, chopped apple, shredded mozzarella cheese, almond slivers, and craisins.

STRAWBERRY POPPY SEED DRESSING

  • 1/4 C sugar
  • 1/2 tsp salt
  • 1/4 strawberry jam
  • 1/4 C vinegar
  • 1/2 C oil
  • 2 tsp poppy seeds

Mix it all together and drizzle on top of your next fruity salad!
